When I go to add new Buckets its still only reading the two test buckets I made while in trail. It should be showing me lots of new Buckets. Any thoughts?!

Can you clarify what you are seeing?
The odrive linking flow for Google Cloud Storage is to specify the bucket you are linking, so each new bucket you want access to will have its own link, which is specified during the link process:
