Is the creation of an encrypted folder only possible inside of the Encryptor folder that is locally on the main HDD where the OS resides?
If I moved my odrive folder to a HDD separate from my main HDD with OS installed, would encryptor now work on that HDD only? I’m trying to encrypt some files that are too big to move onto my main SSD.

The encryption feature is accessible via the Encryptor folder. Moving the odrive folder will move the Encryptor folder, since it is always located in the root of the odrive folder.
It sounds like what you are planning should work just fine, and moving the odrive folder to a new HDD will allow you to add larger files to the Encryptor folder, which will also be on the new HDD now.
