When you sync an encrypted folder to a computer, it will ask you the passphrase the first time you open that folder.
But even if you unsync that folder, the next time you open it, it will NOT ask you the passphrase.
how can I remove the passphrase “key” that is store/cache on that computer and associated to this encrypted folder?
(so I am sure the passphrase “key” is not anymore on that computer and cannot be recover)

You can find and clear the retained passphrase in the following locations:
OS X:
The encryption passphrase is stored, encrypted, in the OS X keychain. You can find it by searching for “odrive-encryption” in “Passwords”.
Windows:
The encryption passphrase is stored, encrypted, in the Windows registry. Navigate to HKEY_CURRENT_USER\SOFTWARE and look for the key(s) starting with “odrive-encryption”.
