Once all my files are in odrive and i’ve freed-up my local storage with unsync, say I perform a macOS search for a file that is now a placeholder file, will that file actually show up in my finder search window?

Placeholder files will show up in a search.
Keep in mind that if you have unsynced a folder, and that folder is now a .cloudf placeholder, you will not be able to search for files that reside inside that folder without first syncing it.
